Technical area
The present invention relates to an installation in the field of food processing for the manufacture of cheese.
State of the art
It is known to manufacture cheese from an installation comprising:a training station of a curd from milk and rennet, to be transferred with the serum thus generated toa molding station in which the curd is disposed in a mold whose walls are perforated, to be separated from the serum, to form a curd bread,a station for transferring curd bread from the molding station toa pressing station in which the curd molds are stored,a refining station during a predetermined period and temperature.
In this type of installation, the pressing station has the role of allowing the decantation of curd bread and evacuate the serum contained therein.
For this, it is known to individually submit the curd molds to the pressure of a plate associated with a cylinder controlled downhill, according to a predetermined pressure.
In general, the pressing station comprises a frame formed of at least two vertical uprights between which are arranged at least two plates, one of which, lower, is a fixed support and the other, upper, constitutes a movable pressing plate, trays between which are placed one or more molds, each of them consisting of a shell, a bottom and a movable key connected to actuating means to act in pressing on the curd.
According to a known embodiment, these actuating means are constituted by guide rods connecting the pressure plate to the support of the level above, to define a deformable parallelogram associated with a flexible pneumatic press cylinder.
The disadvantages of this system reside in the fact of its size and weight, but especially its low accuracy with respect to the horizontality of the pressure plate, because of the necessary game links to prevent blocking. It is also difficult to clean because of the number of mechanical parts involved.
There are also vertical piston presses, centered on the cheese at the rate of one piston per cheese.
If they have the advantage of being simple and easy cleaning, however, they have the disadvantage of being cumbersome by the number of pistons necessary and expensive for the same reason, the cylinders in front be entirely stainless steel in this area.
Also known are the vertical piston presses centered on the cheese, but operating on several cheeses stacked in column. These presses are often constituted by three mobile trays above a base, which makes it possible to press four cheeses, stacked and separated from each other by a plate guided by two vertical tubes, sliding on a tubular structure, diametrically opposed by compared to cheese. The pressure is exerted using a single piston that presses the stack of four cheeses.
These last solve the problems of size, weight and cost, but have a significant risk of lack of horizontality trays, as previously, due to insufficient guidance and leading to the production of a crushed cheese on one side or another. This defect is also accentuated by the wear over time of the sliding parts. This results in a bad aesthetic cheese, unacceptable.
Description of the invention
According to a first phase of the inventive step, it has been sought to solve these problems by creating a pressing installation in which a main pressure plate covers a curd mold or several arranged side by side and acts on at least one second mobile tray located under the main pressure plate and above a fixed support plate, the latter two also receiving curd molds to press.
The goal being that each plate is individually guided to move only vertically and being forced to remain horizontal, from a single pressing force for the whole.
For this purpose, the invention relates to a pressing installation of a curd initially disposed in molds for obtaining cheese and comprising a frame formed of at least two vertical uprights between which are arranged at least two trays, one of which, lower, constitutes a fixed support and the other, upper, constitutes a movable pressing plate, trays between which are placed one or more molds, each of them consisting of a shell, a bottom and a movable key connected to actuating means for acting on the curd, characterized in that it comprises at least one intermediate plate disposed between the pressure plate and the fixed support plate, able to slide freely between the amounts of the frame, by means of synchronization means interposed between at least two parallel side edges of said intermediate plate vis-à-vis and two corresponding amounts laying, so as to ensure the permanent horizontality of said plate during its vertical translation, during pressing.
The present invention also relates to the features that will emerge in the course of the description which follows, and which should be considered in isolation or in all their possible technical combinations.

The plant 1 generally designated in the figures is intended to receive curd molds 2, which may be of different sizes, in order to obtain as many cheeses.
It comprises a frame 3 formed by four vertical uprights 4A, 4B between which are arranged a lower plate 5 constituting a fixed support and an upper pressure plate 6.
Between the plates 5, 6 are placed the molds 2, each of them consisting of a shell 7, a bottom 8 and a movable key 9 connected to actuating means to act by pressing on the curd that they contain.
According to the invention, at least one intermediate plate 10 is disposed between the pressure plate 6 and the fixed support plate 5, able to slide freely between the uprights 4 of the frame 3, by means of synchronization means 11 interposed between at least two parallel lateral edges 12, 13 of said intermediate plate 10 vis-à-vis and two corresponding uprights 4A, 4B, so as to ensure the permanent horizontality of said plate 10 during its vertical translation, during pressing.
The synchronization means 11 in vertical translation of the intermediate plate 10 are constituted by at least two horizontal shafts, one of which 14 or 14A is rotatably mounted between two bearings 15 or 15A made on a lateral edge 12 or 13 of said plate 10. , and the other 18, perpendicular to the first 14 or 14A and located on the same plane, is rotatably mounted between two bearings 29, 29A made on the rear lateral edge 19 perpendicular to the edges 12 and 13 of the same plate 10, each of the two shafts being provided at its respective ends with two pinions 16 or 16A, 20 and 20A adapted to mesh with two corresponding fixed racks 17 or 17A, 21 and 21A disposed on each upright 4A, 4B of the frame 3.
Advantageously, the synchronization means 11 in vertical translation of the intermediate plate 10 comprise a third shaft 14 or 14A rotatably mounted between two bearings 15 or 15A made on the other lateral edge 12 or 13 of the plate 10 and provided at its ends. two pinions 16 or 16A adapted to mesh at its ends with two corresponding fixed racks 17 or 17A disposed on the uprights 4A and 4B of the frame 3.
According to the present embodiment, the frame 3 consists of four lateral uprights 4A, 4B arranged on either side of the trays: intermediate 10, pressure 6 and support 5, two of which 4A directed towards the front of the installation each comprise a rack 17, 17A for one of the gears 16, 16A of each of the lateral shafts 14, 14A, while the two rearwardly directed uprights 4B each also comprise a first rack 17, 17A intended to to the other pinion 16, 16A of the lateral shafts 14, 14A and, in addition, a second rack 21, 21A oriented perpendicular to the first 17, 17A, for each end pinion 20, 20A of the perpendicular shaft 18 to the two lateral shafts 14, 14A.
According to another characteristic, the invention further comprises means for guiding and connecting the intermediate plate 10 relative to the fixed lower plate 5 on the one hand and to the upper pressure plate 6 on the other hand, which consist of by suspension rods 22 interposed between said plates 6, 10 and 10, 5 which they pass freely, so as to allow the transmission of the pressing force "F" of the pressure plate 6 to the intermediate plate 10, by action on the Foncet 9 of the mold 2 that it supports, and consequently on Foncet 9 of the successive mold 2 supported by the fixed lower plate 5, constituting a support in a chain reaction.
The suspension rods 4 are arranged at the angles of the pressure plate 6 and intermediate 10, through holes 23 on the periphery of which abutting heads 24 corresponding to each end of each rod 22.
The length of the rods 22 is at least equal to the total height of a mold 2 and its funcet 9 at the beginning of pressing.
According to the present embodiment, the actuating means in translation of the pressure plate 6, and consequently the intermediate plate 10 are constituted by at least one cylinder 25. The cylinder can be unique and placed above the pressure plate 6 in the pressing axis. It can also be placed on one side at the level of an upright if the pressure plate 6 is provided with synchronization means such as the intermediate plates 10. Preferably, two or more rams 25 or more are used on either side. along two opposite uprights 4 and whose movable pistons 26 are in connection with two control fingers 27 integral with the pressure plate 6. The cylinders can pneumatic, hydraulic, mechanical or electrical.
The fingers 27 for translational control of the pressure plate 6 through oblong slots 28 made on the uprights 4, to ensure their guidance.
Preferably, the actuators 25 in translation of the pressure plate 6 are four in number, namely one per upright 4, for a better balance of the operation in translation during the pressing.
In this case, the pressure plate 6 comprises four control fingers 27 to which are connected the respective rods of the four cylinders 25.
The pressure plate 6 is constituted by a quadrangular frame 6a and two cross crosses 6b and 6c bearing on the fade 9 of the first mold 2, the force "F" of application will be communicated to the other fonts of others lower molds through intermediate plate 10.
As regards the support plate 5, it is constituted by two horizontal crosspieces 5a and 5b connecting two to two amounts 4A and 4B at their bases and which are themselves reinforced by two other cross members 5c and 5d which are perpendicular to them.
It should be noted that the uprights 4A are uprights before installation and they are arranged indented for the purpose of automation of the latter, facilitating the gripping of the molds, for example by palletizing.
Preferably, given the specificity of the products treated by the installation which has just been described, all the metal parts are made of stainless steel, meeting food standards.
According to a practical example of application of the invention, the installation comprises a plurality of intermediate trays 10, 10A, 10B to form a multi-effect pressing column.
In this case, the column will be staged on four levels, as shown in the figures, but other levels could of course be considered, within reasonable weight and space constraints.
The tests have demonstrated the many advantages provided by the invention, namely:Squeeze enough cheese to comply with the rules of manufacture.Reduce the pace of each unit, that is to say, be able to squeeze more cheese on a given height, so for a given volume. This advantage has a very important direct financial consequence, on the cost of construction and operation of the surrounding infrastructure: a new construction may be less bulky (floor space and ceiling height) or an enlargement of the existing workshop may be avoid. This decrease in pitch is due to the mechanical design and also to the position of the pressing piston (s).Ensure a perfect horizontality of the surface of the pressed cheese, due to the perfect maintenance of the pressure plate, thanks to the racks.Avoid soiling: the pressing unit consists of little material, so little contact surface.Facilitating cleaning: the small contact surfaces add the advantage of a very important accessibility of all parts.Decrease the amount of material per pressing unit very significantly.

Installation for pressing a curd initially arranged in molds for obtaining cheese and comprising a frame (3) formed of at least two vertical uprights (4) between which are arranged at least two trays, of which one, lower, constitutes a fixed support (5) and the other, upper, constitutes a movable pressing plate (6), trays (5, 6) between which are placed one or more molds (2), each of they being constituted by a ferrule (7), a bottom (8) and a movable funcet (9) connected to actuating means for acting on the curd, characterized in that it comprises at least one intermediate plate (10) arranged between the pressure plate (6) and the fixed support plate (5), able to slide freely between the uprights (4) of the frame (3), via synchronization means ( 11) interposed between at least two parallel lateral edges (12, 13) of said intermediate plate (10) in vi opposite and two corresponding uprights (4, 4B), so as to ensure the permanent horizontality of said plate (10) during its vertical translation, during pressing, and in that a force "F" applied by the pressure plate (6) on the funcet (9) of the first mold (2) is communicated to the other fashions of the other lower molds via the intermediate plate (10).

Installation according to claim 1, characterized in that the synchronization means (11) in vertical translation of the intermediate plate (10) are constituted by at least two horizontal shafts of which one (14 or 14A) is rotatably mounted between two bearings (15 or 15A) made on one side edge (12 or 13) of said plate (10), and the other (18), perpendicular to the first (14 or 14A) and located on the same plane, is rotatably mounted between two bearings (29, 29A) formed on the rear lateral edge (19) perpendicular to the edges (12 and 13) of the plate (10), each of the two shafts being provided at its respective ends with two pinions (16 or 16A, 20 and 20A ) capable of meshing with two corresponding fixed racks (17 or 17A, 21 and 21A) disposed on each upright (4A, 4B) of the frame (3).

Installation according to claim 2, characterized in that the synchronization means (11) in vertical translation of the intermediate plate (10) comprises a third shaft (14 or 14A) rotatably mounted between two bearings (15 or 15A) made on the another lateral edge (12 or 13) of the plate (10) and provided at its ends with two pinions (16 or 16A) capable of meshing at its ends with two corresponding fixed racks (17 or 17A) arranged on the uprights (4A and 4B) of the frame (3).

Installation according to claims 2 or 3, characterized in that the frame (3) consists of four lateral uprights (4A, 4B) arranged on either side of the plates: intermediate (10), pressure (6) and support (5), two of which (4A) directed towards the front of the installation each comprise a rack (17, 17A) for one of the gears (16, 16A) of each of the lateral shafts (14, 14A) , while the two uprights (4B) directed towards the rear each also comprise a first rack (17, 17A) intended for the other pinion (16, 16A) of the lateral shafts (14, 14A) and, in addition, a second rack (21, 21 A) oriented perpendicular to the first (17, 17A), for each end gear (20, 20A) of the shaft (18) perpendicular to the two side shafts (14, 14A).
